Storing Asparagus And Tomatoes
This is a food tip to store asparagus and tomatoes. I find if you keep tomatoes in a dish on your counter, they taste better and ripen thoroughly. If you keep them in the refrigerator, the taste is not as great, and the ripening process changes.
Asparagus is best kept out of the refrigerator in a container of water. Just like a flower arrangement. This keeps them fresh longer and reminds you to use them before they go soggy.
Drain Fried Foods on Baking Rack
Instead of using paper towels to drain the grease off of fried foods, used a baker's rack. Place the bakers rack over a baking pan to catch the grease when it drains. Save on the cost of using paper towels!

Grilled Tomato Basil Cheese Sandwich
Ingredients:
* 4 slices Sourdough or Italian bread
* 4 slices Mozzarella cheese
* 4 thin slices of firm ripe tomatoes
* 4 Tbsp. Parmesan cheese, finely shredded
* 1 Tbsp. fresh basil, finely chopped
* 1 tsp. balsamic vinegar
* Salt and pepper to taste, if desired
* 2 Tbsp. extra virgin olive oil
* 1/4 tsp. garlic salt
Directions:
Layer the cheese and tomatoes on 2 slices of bread. Evenly sprinkle with parmesan, basil, vinegar, salt and pepper. Top with remaining bread slices.
Combine the oil and garlic salt in a small bowl and brush over the outsides of both sandwiches.
Toast sandwiches in a skillet over medium heat, pressing occasionally, until golden brown on both sides and cheese is melted.
